Have you ever worried about having to cook by yourself when living abroad and far from your home? We know the struggle!

When you are a student sometimes you don’t find time to cook, because you are studying and probably working at the same time and if you want to have a social life as well, the days pass fast without even realising. And probably you don’t have the skills or the imagination to cook different and tasty meals everyday.

That’s why we are here to save you, at least for five days. We have prepared this compilation of 5 easy and cheap meals that any student can do at home and that can work for a quick dinner or a lunch during the day.

If you come to study in Malta, it will be very easy for you to find any of the ingredients needed for these quick meals. Malta has a Mediterranean cuisine that is full of variety, with plenty of fruits and vegetables, fish, meat, eggs and bread, as the main ingredients.

1. PIZZA EXPRESS (10min)

This is a very easy and quick way to prepare a delicious meal with very few ingredients. And healthier than a precooked pizza that you can find in a supermarket. Also you can use the ingredients you have in the fridge at that moment.

You will need:

  • Soft bread (8 slices)

  • Tomato sauce

  • Tomato 1

  • Shredded cheese

  • Mozzarella

  • Zucchini

  • Basil and oregano

You can add any other ingredients of your choice like mushrooms, chicken, tuna… or some ingredients that have been in the fridge for too long and you don’t want to waste them.


Put the oven to heat at 180°C while you prepare the toppings of the mini pizzas. While the oven is heating, take the slices of bread and spread the tomato sauce and oregano over them. Distribute the shredded cheese, the mozzarella, the zucchini and the tomato (cut in slices). Bake them for 7 minutes, until the cheese melts. Serve with the basil, salt and pepper and a trickle of oil.
